Derinded Pancetta

This derinded, rolled pancetta is nothing more than the “naked” version of the pancetta with rind.

Cut of meat: derinded and trimmed pork belly.

Processing: the meat is trimmed and derinded, leaving the pork belly literally naked. During the stitching phase, the ends are wrapped in pig bladders for protection, while the stitched part is covered with vegetable parchment paper. It is then machine-tied, hung and taken to the drying chambers, before moving on to the maturing phase, which normally does not exceed 4-5 months.
