Salami is produced starting with a mix of lean and fatty meats and spices; it is stuffed into a natural casing, hand-tied, before going on the maturing process. It owes its name to the salting applied to preserve it. Our salamis are made from pork only, to which spices are added to improve and enhance the flavour. There are as many types of salami as there are flavours and recipes.
