A pinkish-white colour, soft to the point that it melts in your mouth: lardo is pure ecstasy for the palate. As the name itself implies, it is the fat present in the dorsal part of the pig which is subjected to various stages of processing: salting, flavouring (only herbs and truffles) and cold maturation. Heavy pigs are used to obtain a quality product, i.e. pigs with well-developed muscles and a correct ratio between fat and lean cuts. Gluten and dairy free.
