Organoleptic properties: a typical red colour with a darker edge, a firm but not dry consistency, a slightly spicy aroma and the flavour of a well-balanced cured meat.
Eating suggestions: it is an excellent second course for a tasty and balanced lunch, with the sole addition of oil and lemon, or a few flakes of Grana Padano. It can be transformed into a tasty appetizer by creating bundles with its slices, filled with walnuts and goat’s cheese.
