Cut of meat: the raw material comes from pigs from the Emilia / Lombardy supply chain – as in the case of PDO certified coppa.
Processing: the processing steps are the same as for traditional coppa, but, due to market needs (generally for the Horeca chain), the product is completely peeled so it can be sliced immediately. Usually the La Dolce Coppa matured for four months is used, but, on request, any type of coppa can be peeled.
